The ‘DerMann’ bakery can reflect on 160 years of company history. From the traditional Viennese ‘one-man business’ to today’s successful and well-known bakery that is active beyond the borders of Vienna. The fourth generation is already running the company, and the product range now includes 51 types of bread, 40 types of rolls, 172 pastries and 35 snacks. ‘Craftsmanship is still important today – that’s why many breads and pastries are still baked by hand in our bakery,’ says master baker Kurt Mann, explaining the philosophy. For almost two years, Kurt Mann’s son, Michael Mann, has been part of the management of the family business. The number of employees has risen from 30 in 1973 to more than 800. The branch network is continuously being rebuilt and expanded and currently comprises 83 branches.
In order to be able to provide customers with a wide range of freshly baked goods every day, the traditional DerMann bakery produces them on an order-by-order basis. During the day, the orders of all 83 branches are recorded for the next day by 5 p.m. The data is prepared for the EDP system’s merchandise management system, and production starts in the evening. From 2:00 a.m. onwards, the goods are delivered to Vienna and Lower Austria branches via an in-house logistics system. It is crucial that the entire system, from the receipt of raw materials to production and dispatch, functions flawlessly around the clock – there is no warehouse as a buffer at DerMann!
Within the framework of the overall IT security concept, the areas where improvements could be made were considered, and in the process, e-mail was found to be a gateway for attacks. The majority of all attacks often start with a supposedly harmless e-mail. The consequences can range from phishing attempts and malware attacks to targeted attacks. The choice has already proven itself in the implementation phase.
